THE PRODUCTION PROCESS

 

At Massepain Sleeubus we only work with ingredients of the highest quality. We only select the best almonds from Portugal and Spain to ensure the unique texture and taste of our marzipan. Our marzipan is made with almonds from the most recent harvest, which contains an ideal balance of bitterness and full flavour. We also use the best granulated sugar that has a proper grain size and texture. Combined with the unique artisanal knowledge of a loyal and competent team of experienced taste masters, we guarantee an explosion of flavours with every bite you take from this sweet gold. 

Each production of marzipan starts with peeling the almonds. We still carry out that process in-house the morning of production. This way we guarantee that our master confectioner can work with the freshest almonds and incorporate all those natural aromas into the final product. You can really taste that difference.
 

After blanching and warming our almonds, we mix them with the highest quality granulated sugar. This is where a first fusion of taste and texture is created. ‘The first dance’ of two beautiful ingredients donated to us by Mother Nature.

 

After a first gentle mix, the whole thing is crushed into a coarse almond paste for the first time in an authentic Bauermeister mill where the two ingredients are combined. In the second phase, a heavier Bauermeister with an impressive pressure power of 450 kg ensures that the mixture of sugar and almonds is rolled into a deliciously smooth paste. Brutal magic!
